"I didn't know what else to do with them!".
That is what I always tell people about our ice cream. You see we have used local eggs from the beginning for our desserts, cakes, and icings. We use more whites than yolks and as a result we would have buckets of beautiful golden yolks waiting for a purpose.
Then it dawned on me. Fresh yolks + heavy cream + a well used Italian gelato machine = deliciously dense old fashioned ice cream. We have chosen to keep it pure and simple. We don't use stabilizers that incorporate air and we don't add unnecessary artificial colorings just to make you think the mint is mintier.
